I can’t believe next weekend marks the official end to summer. These seven simple salads will help you to say, ” So Long Summer!” at next weekend’s BBQ.  They are fresh, colorful, healthy, and show off summer’s best fruits, veggies, and herbs. I just know you’re going to love them!

 

Red, White, and Blueberry Broccoli Slaw is patriotic, healthy, and delicious. It’s filled with fresh berries and the light dressing is made with kiefer.

 

Perfectly Peachy Summer Berry Salad is always a hit! It features fresh summer berries and peaches with salty cheese over fresh bitter greens. Delicious!

Is your garden bursting with basil and tomatoes? Show off your fresh produce with this Kicked up Caprese Salad.

Tortellini Pasta Salad with Pesto and Asparagus is perfect for a hot summer day. It can be made with store bought pesto or you can whip up your own quick pesto is your herbs are out of control like mine.
