Sauerkraut | 16 oz. | |
Diced red and green bell pepper | About 1 cup | |
Diced carrot | About 1/2 cup | |
Sugar | 1/2 cup | |
Rice or apple cider vinegar | 1/2 cup |
This simple salad is delicious. It’s an old family favorite that my grandma used to make for family get-together. If you’re a sauerkraut lover, you’re going to want to try this.
1. Drain your sauerkraut. You don’t have to squeeze the life out of it, just get the majority of the juice out. I do not rinse mine, but grandma used to. It’s your preference. I like to get the kraut from the refrigerator section of the grocery store, but canned will work too. You can choose caraway seeds or no caraway seeds. Again this is your choice. I like the seeds.
2. Place the sauerkraut into a bowl and add the sugar, apple cider or rice wine vinegar, diced bell pepper, and carrots.
3. Toss everything together. The longer it sits the better it gets, but you can eat this right away if you desire. You can eat this straight out of the bowl or serve it on top of sausages. It’s great either way!
