milk 1/2 cup
cheese 1/2 cup
flour a tablespoon

5 Minute Cheese Sauce is seriously the simplest sauce you can make for quick nachos, cheese fries, or even a quick mac and cheese. We eat it frequently. You can use all kinds of cheese, but usually in our house it’s Cabot Sharp Cheddar. I have even done it with Cabot’s 75% Fat Free Cheese to decease the guilt factor of eating a bowl of cheese with dinner. This sauce is creamy and delicious. It comes out perfect every time too. The measurements are approximations and can be doubled to make additional sauce, but it may need to be heated for additional time and stirred halfway though cooking.

  1. Dump about 1/2 a cup of milk into a bowl.
  2. Add about a tablespoon of flour.
  3. Stir to remove the lumps. The flour won’t disappear because the milk is cold. Don’t worry, I promise it will be fine!
  4. Add in about half a block of cheddar or about 1/2 a cup of any cheese you have on hand. I usually do this half a block of Cabot Sharp Cheddar. Their Habanero Cheddar is also great in this. Break it into small chunks. I do not waste time cutting this up. Your hands are the best tool you have.
  5. Pop into the microwave for 2 minutes.
  6. When the timer beeps, remove and stir immediately to combine everything and smooth it out.
  7. As I said above, enjoy with fries, tortilla chips, quick nachos, pour over cooked veggies, or even stir this into some cooked pasta for a quick mac and cheese. It’ so good!
