Extra Quick Mock Ceviche is the a great light meal or appetizer. It’s only 4 ingredients and will totally cure your craving for ceviche. Why is it mock? Traditionally the fish and seafood in a ceviche is cooked by the acid of the lime juice and needs to sit for a while to “cook”. This recipe completely eliminates that step.
- Combine your salsa and your salmon in a bowl.
- Add lime juice until you like the taste. I used nearly the whole lime, but I am a lime lover.
- Serve with tortilla chips and hot sauce if you like things extra spicy.
*Use a good fresh refrigerator salsa. I don’t know if the jarred would taste as good.
*Want to make this more hearty? Add cooked shrimp too, and/or chopped cucumber or avocado.
