Simple Saint Patrick’s Day Side Dishes
It is almost Saint Patrick’s Day and my mouth is already watering at the thought of a delicious corned beef dinner. My family has made corned beef with boiled cabbage, carrots, and potatoes for as long as I can remember to celebrate. While I love the traditional sides with my corned beef, I decided to start mixing things up a bit. Here are two simple Saint Patrick’s Day side Dishes: Irish Twice Baked Potatoes, as well as, Smashed Turnips and Carrots.
Irish Twice Baked Potatoes are my take on two traditional Irish potato dishes, colcannon and champ, combined into something new and delicious. These tasty, potato cups also work wonderfully as an stater during a Saint. Patrick’s Day Party because they can be made in advance, travel easily, and can be eaten with out silverware.
Smashed Turnips and Carrots are a brightly colored, buttery side dish. I wish I could say I came up with the recipe on my own, but I actually got it from one of my very best friend’s. Her mom is from Scotland and frequently made this for dinner. When I first had it, I feel in love with the sweetness of the carrots mixed with the slight bitterness of the turnips, and the creaminess of butter. I just know you will love it too!
