watermelon cut into bite-sized chunks | about 4 cups | |
fresh basil | a handful | |
fresh mint | a handful | |
lime | 1/2 | |
salt=optional to taste |
Watermelon Salad with Basil and Mint is a quick, light and refreshing summer salad that is perfect for BBQ’s and weeknight meals. I like to serve it with my Chinese Five Spiced Pork Burgers with Asian Slaw.
- If you didn’t purchase a pre-cut watermelon, cut up your watermelon into bite-sized chunks.
- Place about 4 cups of watermelon into a bowl.
- Rinse your herbs under water. Pat them dry and rub them a little between your fingers to release the oils. Then tear them into pieces and place them with your melon.
- Squeeze the juice of half a lime over the top of everything.
- Toss to combine.
- Add salt if desired.
- Enjoy!
Tips:
*Do you have a little salad left over? If you didn’t add salt, don’t worry pop it in the fridge and use it in your sparkling water the next day for a little treat. It’s delicious!
