Watermelon Salad with Basil and Mint

Ingredients

watermelon cut into bite-sized chunks about 4 cups
fresh basil a handful
fresh mint a handful
lime 1/2
salt=optional to taste

Watermelon Salad with Basil and Mint is a quick, light and refreshing summer salad that is perfect for BBQ’s and weeknight meals.  I like to serve it with my Chinese Five Spiced Pork Burgers with Asian Slaw.

  1. If you didn’t purchase a pre-cut watermelon, cut up your watermelon into bite-sized chunks.
  2. Place about 4 cups of watermelon into a bowl.
  3. Rinse your herbs under water. Pat them dry and rub them a little between your fingers to release the oils. Then tear them into pieces and place them with your melon.
  4. Squeeze the juice of half a lime over the top of everything.
  5. Toss to combine.
  6. Add salt if desired.
  7. Enjoy!

 

Tips:

*Do you have a little salad left over? If you didn’t add salt, don’t worry pop it in the fridge and use it in your sparkling water the next day for a little treat. It’s delicious!
