This salad is so easy, healthy, and yummy you’re going to make it all the time! You can use any type of apples. I had honey crisp when I made this. It is simply gorgeous when you use red and green apples and rainbow carrots too. This tasty twist on traditional slaw can easily be doubled and can be made in advance. There is zero mayo, so it’s perfect for picnics and cookouts as well.
- In a bowl combine your honey and apple cider vinegar. I like to use equal parts of each, but you can easily modify this to suit your tastes.
- Chop up your apples, carrots, and nuts. I like pistachios in this for an extra pop of color. As I mentioned above, use rainbow carrots and different colored apples for added color, texture, and flavor.
- Combine everything together and season with salt and pepper.
